Gastronomy becomes another example of the distinct personality of the
“Pasiegos”. The region has a rich and varied gastronomy. This valley,
gives its name to one of the best known puddings of the region which
enjoys a prestigious recognition in the whole of Spain, the “sobaos and
quesadas pasiegos”; made with flour, eggs, milk, sugar and butter of
the best quality; whose traditional recipes have been passed on
generation to generation. Also a family tradition, the unmistakable
“Pasiego” cheese, fresh and soft made with cow’s milk. You must not
forget to taste the “hojaldres” (puff pastry sweets) typical of
Liérganes, popularly known as “sacristanes”. And finally, it is worth
highlighting the typical stew known as the “cocido montañés”
(traditionally coming from the interior regions of Cantabria made with
white beans), the excellent meats coming from the green pastures of
this land, plates that stand out for their abundance and good
traditional cooking, prompting food lovers to travel all over the
region to enjoy the good food.
